As the name states. It’s from Arizona. It’s grass fed. And finished. 100%. Always.
Our beef is sourced and slaughtered with out partners at AZ Grass Raised Beef. They proudly source from over three dozen different ranches around Arizona. A majority of them to the north and northeast along the Colorado plateau, with a few ranches down in the higher elevations of the southeastern Arizona. Many of them are owned and operated by Hopi and Navajo and grazed upon their respective reservations.
While the ranches, ranges and grasses vary across the state, our sourcing standards do not. Every cow and cowboy jumps hoof through hoop, boasting certification from The American Grassfed Association. The AGA ensures ranchers are held to the highest standards in regard to animal health and welfare, all the while practicing responsible land management and regenerative grazing practices.
Our slaughter house aka Boutique Processing Plant (correct verbiage for guests) is USDA certified and located in Chino Valley, just outside Prescott and about two hours from the Meat Market. Depending on the week, they slaughter around thirty cows, resulting in a much slower, thoughtful process than the average US slaughterhouse processing anywhere between 10-400 cows an hour.
Our cows our slaughtered on Monday, Wednesday and Friday, processed throughout the week, and we pick it up from the plant every Thursday. Depending on the season we bring in 1-2 whole cows a week. Thanks to our partnership, we are generally allowed the option to purchase specific cuts by the case from Az Grass Raised Beef. These cuts include but are not limited to Tri tip, Hanger, Filet Mignon, Skirt, Bavette, Top Round and Picanha.
We dry age all Ribeyes, Striploins (NY) and Sirloins for a minimum of 30 days in our walk in. This reduces moisture in the steaks, breaks down proteins (makes it more tender) and intensifies the grassy, earthy notes that make our beef so delicious.
All of our beef is hormone and antibiotic free. Within six months after birth, they are inoculated with a vaccine to blackleg - a fatal bacterial disease.
