Emigh lamb
Located in the dry hills near the delta of the Sacramento River, the Emigh family has been raising sheep and cattle since the mid 1800s. Today Martin and his children continue to carry on the family tradition of sustainable ranching, providing us with some of the tastiest grass fed and finished lamb we have tried.
Emigh raises lambs that are a cross from two different breeds, Ramboulliet and Suffolk, which are both bred for meat. Raised on irrigated pasture, and fed an all grass diet after weaning from their mothers, the lambs spend their days munching on alfalfa until they reach harvest weight at about one year.
The lambs are humanely harvested and processed at a USDA inspected plant, and then shipped whole to the shop for us to process. Typically we see whole lambs in the range of a 60-75 pound hanging weight.
